Last summer we spent a few weeks in a little village in the South of France, where Justin’s Dad has a home. I've always loved French cuisine, especially in the countryside. Everything to do with cooking is incredibly local - from the produce, to the recipes, to the wine.
In true French style, this salad is all about the ingredients. It's super simple to make, and it's absolutely delicious. Apparently Roquefort is also good for your health!
INGREDIENTS
- Butter lettuce
- Roquefort cheese
- Walnuts
- Walnut oil
- Walnut vinegar
METHOD
It's a curious, unspoken rule in France that lettuce should never be cut with a knife, so gently tear (!) the lettuce and mix with roughly chopped walnuts and chunks of Roquefort. Combine 3 parts of walnut oil with 1 part vinegar for the dressing, and season with salt and pepper.
