This quick and easy recipe is a healthy twist on a classic iced coffee. I've used almond milk instead of cow's milk, and whole dates as a natural sweetener instead of refined sugar. It's also equally delicious with unsweetened soy milk, or whichever nut milk you prefer.
Ingredients
Yields 1 large or 2 small serves
- Double shot espresso (or 1/4 cup strong coffee)
- 1 cup unsweetened almond milk
- 5 dates, pitted
Method
- Place the coffee, almond milk, and dates in a blender. Puree until smooth, and serve over ice. That's it!
